A modern twist to traditional khichdi using quinoa and mixed vegetables.

Ingredients:
1/2 cup quinoa
1/4 cup moong dal
1/2 cup chopped vegetables (carrots, beans, peas)
1 tsp cumin seeds
1/4 tsp turmeric
1 tbsp ghee
Salt to taste
Instructions:
Wash and soak quinoa and moong dal for 15 minutes.
Heat ghee, add cumin, and sauté vegetables.
Add quinoa, dal, turmeric, and salt.
Add 2 cups of water, cover, and cook until soft.
